Grown on a tree known as Theobroma cacao in Africa (70% of all cacao beans come from this region), it starts out with the seeds being as bitter as a grapefruit. Ò Fermented, dried, then sent through a process which winds up making it into a thick paste called chocolate liqueur, it is mixed with a variety of ingredients to wind up with the chocolate bars we know and love. It comes in a variety of shapes, forms, and flavors. It is used in many different recipes. Some people enjoy it for its rich and velvety texture and taste. Some enjoy it for the sensation it brings. Others use it to bring them to another place, savored as it melts over the tongue. It is the quintessential comfort food.Ò  It is a versatile food which can be used in a variety of desserts from cookies to ice cream to cake to pastries.
