Ingredients:
- 500 g (1 lb) lamb fillets, cut into short strips, about 2.5cm wide
- 250g (8 oz.) baby English spinach leaves, torn
- 3/4 cup (115g/4 oz.) frozen peas
- 3 tablespoons chicken stock dash of chilli sauce
- 2.5cm (1 inch) piece fresh ginger, thinly sliced
- 2-3 tablespoons oil
- 2 cloves garlic, crushed 2 tablespoons soy sauce
- 2 leeks, sliced
- 1 small bunch bok choy, short lengths
- 1 teaspoon of sugar
- 1 egg white, beaten
- 1 tablespoon cornflour
Directions:
1. Season the lamb with salt and pepper, dip in the egg white and dust it with cornflour.
2. Then heat half oil in a wok and add the ginger, the soy sauce and the garlic. After that stir-fry over high heat for about 30 seconds or so. Then add the lamb and stir-fry for about 1 minute or until browned. Then reduce the heat, cover it and cook it for about 3 minutes or so. After that remove the lamb from the wok.
3. Then heat the remaining oil in the wok and after add the leek. Stir-fry over high heat for about 3 minutes or so.
4. After that add the spinach, the bok choy and the frozen peas to the wok and stir-fry for about 1 minute or so. Then reduce the heat and cover the wok to steam the vegetables for about 2 minutes. Then combine the sugar, the stock and the chilli sauce and add to the wok. After that add the lamb and stir very well. Then stir-fry for about 2 minutes or so (until the lamb and the vegetables becomes tender).
