Weekend Breakfasts - 3 Scrumptious Pancake Recipes

As a busy mother, wife and grandmother, I don"t have time during the week to cook big breakfasts for my family. When the weekend finally rolls around, I look forward to getting up early in the morning and preparing a nice hot breakfast for my family. We enjoy delicious pancakes made from scratch, omelets, egg casseroles, waffles, egg and cheese burritos and of course, all of those yummy sides like ham, bacon and toast. The following pancake recipes were given to me many years ago and to this day, we still enjoy making them every few weeks. You can top them with melted butter, your favorite syrup or with some confectioner"s sugar. Potato-Cakes 2 tablespoons butter 2 eggs 1/4 cup milk 2 cups uncooked potatoes, finely shredded 1/4 cup Bisquick baking mix 1 teaspoon salt In a large skillet, melt the butter over low heat.
